Hello Foodies,

I hope you are trying and enjoying the earlier recipes. As promised, here is the latest recipe.

The recipe is “Spring Onion and Potato Fry”. It can be served with Roti/Parathas.

Preparation Time: 5 minutes.

Cooking Time: 15 minutes.

Yields: 2 servings

Ingredients:

  • Spring Onions (Green) ~ 3 - 4 strands
  • Spring Onion (White) ~ 3
  • Potato ~ 1
  • Green Chilies ~ 2
  • Panch Phoron ~ ½ tsp
  • Dry green chilli ~ 1
  • Turmeric Powder ~ 1 tsp
  • Coriander Powder ~ ½ tsp
  • Salt to taste

How to prepare:

  • Chop the spring onions (green & white) and potato and slit green chillies.
  • Heat oil in a pan, add dry green chilli and panch phoron.
  • Add the spring onions (white) and saute for 1 minute.
  • Add potato and green chilli and saute for another 1 - 2 minutes.
  • Finally add the spring onions (green) and this spring onion will leave some water on heating.
  • Add turmeric powder and coriander powder. Now cover it with a lid and keep in medium flame.
  • Open the lid after 3 - 4 mins and keep stirring until the water soak fully.
  • Add salt to taste. Turn off the gas.
  • Serve hot with roti / paratha.
