Shakkar Para

Shakkar Para is a sweet, and crispy biscuit coated in sugar syrup which is very yummy snack usually made in festivals. 

Preparation time: 30 minutes
Cooking time: 30 minutes
Serves: 4

Ingredients:

  • Refined flour/ maida ~ 1 cup
  • Sooji/ Semolina ~  1/4 cup
  • Clarified butter (Desi ghee) ~ 3 Tbsp, melted
  • Water~ 1/2 cup (for sugar syrup) + 1/3 cup (for  dough)
  • Sugar ~ 2/3 cup
  • Powdered sugar ~ 1 Tbsp
  • Cardamom ~ ½ tsp, crushed
  • Oil ~ for frying

How to prepare:

  • In a bowl, take maida, sooji, and ghee. Mix it well with the ghee.
  • Add water. Knead the mixture into soft dough. Cover with muslin cloth and keep it aside for 15 minutes.
  • Knead the dough once more to make it workable. 
  • Divide it into two parts and make smooth balls out of them.
    Roll the balls into 8 inch circles.
  • Cut the circle into your desired shape. In this we have made square in shape of ½ inch thickness.
  • Separate carefully.
  • Heat the oil. Add the square shaped para into the oil and lower the heat. 
  • Fry on low heat till golden pink and drain it on paper napkin..
  • Allow to cool completely.
  • In another pan, add sugar to ½ cup of water and bring it to boil.
  • Let it simmer for 5-6 minutes. Add crushed cardamom powder to it.
  • Turn off the gas and quickly add all the para into the sugar syrup. Mix it well.
  • When all are coated, spread them on large plate to cool.
  • Once cooled, separate the pieces which are joined together. 
  • Let it cool completely and then store in an airtight container.
