Potato Fried Rice


Hello Foodies,
It is simple yet packed with flavours! Potato fried rice is a tasty and easy to cook recipe with simple ingredients. In this recipe, the rice should be properly cooked and cool it thoroughly. It is suitable for lunch box or a quick meal. It can be served with any vegetable curry, curd, raita or tomato chutney with garlic & onion.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Yield: 2 servings
Ingredients:
- Basmati Rice ~ 1 cup
- Potato ~ 2, medium
- Carrot ~ 1, small
- Peanut ~ ½ cup
- Onion ~ 1
- Garlic ~ 3- 4 cloves, chopped
- Green chilli ~ 2
- Ginger ~ 1 tsp, grated
- Raisins ~ 5-6
- Pepper powder ~ 1 tsp
- Sugar ~ 1 tsp
- Cumin seeds ~ ½ tsp
- Bay leaf ~ 2
- Ghee ~ 1 tsp
- Refined Oil ~ 3 Tbsp
- Salt to taste
- Water ~ as needed
Dry Spices:
- Cinnamon ~ 1 inch
- Green Cardamom ~ 4
- Cloves ~ 4-5
How to Prepare:
- Wash and cook rice. Rice should be grainy, fully cooked but not mushy. Drain off the rice once cooked and then cool it properly.
- Wash, peel and cut potatoes into small cubes and finely slice the onion. Chop green chillies, garlic cloves, carrot and grate ginger. Make a fine powder of the dry spices.
- Heat 1 Tbsp oil in a deep pan. Add the peanuts and saute. Keep it aside.
- Add the remaining oil + ghee into the pan. Add bay leaf and cumin seeds and allow it to sizzle.
- Add finely sliced onions, saute till it becomes golden brown in colour.Then add ginger, chopped garlic cloves, green chillies and dry spices powder. Saute for 2 minutes.
- Add cubed potatoes and chopped carrot, roast till they are fully cooked. Add pepper powder, sugar and salt. Saute well.
- Add cooked rice to the pan.
- Now add fried peanuts and raisins. Mix well. Saute for few minutes.
- Turn off the gas.
- Garnish potato fried rice with coriander leaves and serve with vegetables curry or raita or tomato chutney.
