Palak Corn | Corn and Palak Curry | Corn and Spinach Curry | Creamy Corn Palak


Hello Foodies,
Corn and Palak together is a great combination. The sweetness of corn adds very good flavours to spinach. This dish is ideal for Non-Spinach lovers. This creamy and spicy curry really tastes good. Palak and corn both compliments the taste of each other. It is well paired with Butter Naan/ Paratha/ Roti/ Jeera Rice.
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Yield: 4 servings
Ingredients:
- Spinach/Palak ~ 1 bunch, puree
- Sweet corn kernels ~ 2 cups, boiled
- Turmeric Powder ~ ¼ tsp
- Red chilli powder ~ ¼ tsp
- Garam masala powder ~ ½ tsp
- Kasuri methi/ dried fenugreek leaves ~ ½ tsp, crushed
- Asafoetida/Hing ~ a pinch
- Cumin seeds ~ 1 tsp
- Cream ~ ¼ cup, beaten
- Water ~ 1 cup
- Oil ~ 2 - 3 Tbsp
- Butter ~ 2 tsp
For masala:-
- Onion ~ 1 medium, chopped
- Tomato ~ 1 medium, chopped
- Ginger ~ 1 inch, chopped
- Garlic cloves ~ 4-5, chopped
- Green chillies ~ 2, chopped
- Cashew nut ~ 2 -3 tbsp, chopped
How to Prepare:
- Boil the sweet corn kernels and keep it aside.
- Chop onion, tomatoes, green chillies, ginger and cashew nuts.
- Chop and rinse the spinach very well in water. Boil water with some salt, add the spinach to this boiled water. Turn off the gas.
- Let the spinach leaves be immersed in the water for 2 - 3 minutes.
- Then drain and immerse the spinach in cold water, keep it for 2-3 minutes.
- In a grinder, make a smooth puree of spinach adding very little water. Then keep it aside.
- Again in the grinder, add all the ingredients listed under “For Masala” and make a smooth paste. Keep it aside.
- Heat oil + butter in a deep pan. Add hing and cumin seeds, allow it to sizzle.
- Now add the Masala paste and saute stirring occasionally.
- Add turmeric powder, red chilli powder, and garam masala powder.
- Keep on stirring the masala till oil starts to leave the sides of the paste and the colour will change too.
- Add the spinach puree and stir.
- Add water and salt. Let it simmer for 6 - 7 minutes on a low flame.
- Add the boiled sweet corn kernels and simmer for 1 - 2 minutes more.
- Now, beat and add the cream till smooth and also add Kasuri methi.
- Stir and cook for 1 minute. Turn off the gas.
- Garnish with red chilli or whatever you want to garnish with and serve creamy corn palak hot with Butter Naan/ Paratha/ Roti/ jeera rice.
