Masala Bhindi (Okra)


Hello Foodies,
Masala Bhindi is an indian dish in which the bhindi is combined with onions ,tomatoes and indian spices. This is a very simple recipe and is enjoyed with indian flat bread like paratha/roti.
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Yield: 2 - 3 servings
Ingredients:
- Bhindi (okra) ~ 10 - 15 pieces
- Onions ~ 1
- Tomato ~ 1
- Ginger - Garlic paste ~ 1 tsp
- Green chilli ~ 1
- Turmeric powder ~ ¼ tsp
- Coriander powder ~ 1 ½ tsp
- Red chilli powder ~ ½ tsp
- Pepper powder ~ ½ tsp
- Amchur ( dry mango powder) ~ ¼ tsp
- Garam masala ~ a pinch
- Kasuri methi ~ ¼ tsp
- Sugar ~ ½ tsp
- Salt to taste
- Cumin seeds ~ ½ tsp
- Oil ~ 2 Tbsp
- Water ~ 2 Tbsp
- Coriander leaves ~ for garnish
How to prepare:
- Wash, soak and dry the okras. Cut the okra into 1" pieces. Chop the onion and tomato into small pieces. Slit the green chillies. Chop the coriander leaves and keep it aside.
- Heat 1 Tbsp oil in a pan and add the okra/bhindi. Saute on low flame till 7-8 minutes. Remove the okras from the pan.
- Add the remaining oil in a pan and heat it. Add cumin seeds and allow it to sizzle.
- Add chopped onions and saute till it becomes golden brown in color.
- Add the ginger-garlic paste and fry till the raw smell goes off.
- Then add the green chilli and chopped tomatoes and cook till soft.
- Add all the spices except kasuri methi and garam masala.
- Add sugar.
- Now add the okras to the pan and mix it well. Cook for few minutes.
- Add water for the masala gravy. Let it come to boil.
- Finally add kasuri methi, garam masala, and salt. Turn off the gas.
- Garnish with chopped coriander leaves.
- Serve hot with roti / parathas.
