How to make Chole | Punjabi Chole | Spicy Chickpeas | Chole Masala

Hello Foodies,

One of the most delicious and tasty dish is the Chole ( Spicy chickpeas). It is also known as chana masala. It is a North Indian food which is enjoyed with bhatura ( deep fried puffed Indian  bread). It can also be served with puri / paratha. A spicy and thick gravy is made with chickpeas, tomatoes, onions and Indian spices.

Soaking Time: Overnight / 6 hours

Preparation Time: 15 minutes

Cooking Time: 60 minutes

Yield: 4 servings

Ingredients:

  • Kabuli chana (White Chickpeas) ~ 1 cup
  • Onions ~ 2 medium
  • Tomatoes ~ 2 large
  • Ginger- garlic paste ~ 2- 3 tsp
  • Green chilli ~ 2
  • Turmeric powder ~ 1 tsp
  • Coriander powder ~ 2 tsp
  • Cumin powder ~ 1 tsp
  • Pepper powder ~ ½ tsp
  • Red chilli powder ~ ½ tsp
  • Amchur powder ~ 1/3 tsp
  • Curd ~ 1 Tbsp
  • Cumin seeds ~ ½ tsp
  • Asafoetida/hing ~ a pinch
  • Dry red chilli ~ 1
  • Bay leaf ~ 2
  • Cinnamon ~ ½ inch
  • Cardamom ~  2-3
  • Cloves ~ 4-5
  • Sugar ~ 1 tsp
  • Oil ~ 2 Tbsp
  • Salt to taste
  • Onion rings and lemon slice ~ For garnish

How to Prepare:

  • Wash and soak the kabuli chana for overnight or at least 6 hours. Drain well. Pressure cook kabuli chana with bay leaf, a pinch of turmeric powder, salt and required amount of water for 10 - 15 minutes on low flame. Do not discard drained water, keep it for further use.
  • Chop 1 onion and the tomatoes and make paste of the remaining onion, ginger-garlic and green chillies.
  • Dry roast cardamom, cloves and cinnamon over low flame for 1 minute. Grind them in a grinder to make a smooth dry powder.
  • Heat oil in a pan, add hing, dry red chilli and cumin seeds allow it to sizzle.
  • Add the onion paste and saute for 2 minutes, then add the chopped onion and saute till it become golden brown in color.
  • Add the ginger-garlic-green chilli paste, saute till the raw smell goes off.
  • Add chopped tomatoes and cook till becomes soft.
  • Now add turmeric powder,cumin powder, coriander powder, pepper powder, red chilli powder, cinnamon-cardamom-cloves powder, amchur powder and sugar.
  • Mix it well and cook for few minutes.
  • Add curd and saute for 2 - 3 minutes.
  • Finally add the chickpeas/kabuli chana and mix it properly with the mixture. Cook for 10 minutes. 
  • Add the drained water and salt as required. Let it simmer and cook until gravy becomes thick on medium flame, for around 4-5 minutes.
  • Turn off the gas.
  • Garnish with onion rings and sliced lemon and serve hot with Bhatura or Puri or Parathas.
