How to make Baby corn Peas Fried Rice | How to make Fried Rice | Baby corn Peas Fried Rice

Hello Foodies,

A simple, delicious Indian style fried rice which is easy to cook and the ingredients are easily available in your kitchen. Fried rice can be made in a variety of ways. You can use your favorite veggies like beans, bell pepper, spring onions, carrots, mushroom, and cabbage too. You can use chicken, eggs, and many more..the list goes on and on. Here we have used Baby-corn and Peas. It can be served with Raita, Curd, Pickle, Tomato chutney with garlic & onion, any Vegetable curry, or any Non-vegetarian curries.

Soaking Time: 30 minutes

Preparation Time: 10 minutes

Cooking Time: 15 minutes

Yield: 4 servings

Ingredients: 

  • Basmati Rice ~ 2 cups
  • Baby-corn ~ 5
  • Green Peas ~ ¾ cup
  • Onion ~ 1
  • Green chili ~ 2
  • Ginger  ~ 1 tsp grated
  • Cashews ~ 4-5
  • Raisins ~ 5-6
  • Cumin seeds ~ ½ tsp
  • Bay leaf ~ 2
  • Cinnamon ~ 1 inch
  • Green Cardamom ~ 4
  • Cloves ~ 4-5
  • Sugar ~ 1 tsp
  • Ghee ~ 1 tsp
  • Refined Oil ~ 3 Tbsp
  • Salt to taste
  • Water ~ 4 cups

How to Prepare:

  • Wash basmati rice till the water runs clear. Soak the rice for  30 minutes. Drain and keep aside.
  • Cut baby corn lengthwise and finely slice the onion. Chop green chilies and grate the ginger. Make a fine powder of cinnamon, green cardamom, and cloves. Cut cashews in small pieces.
  • Heat oil + ghee in a pressure cooker, add bay leaf and cumin seeds and allow it to sizzle.
  • Add finely sliced onions, saute till it becomes golden brown in color.
  • Then add ginger, green chilies, and powder of cinnamon, green cardamom, and cloves. Saute for 2 minutes.
  • Add baby corn and peas, saute till the color of baby corn turns light golden. Do not burn.
  • Now, add the drained rice and saute for 1- 2 minutes.
  • Add cashews, raisins, sugar, salt, and water.
  • Cover and pressure cook for 2 whistles on a high flame.
  • Turn off the gas. Let it sit for 3 - 4 minutes then release the steam by lifting the weight of pressure cooker.
  • Garnish and serve with Tomato-onion-garlic chutney. It can also be served with raita, green chutney or curd.
