Egg Bhurji


Hello people,
Egg Bhurji is one of the most simple and quick breakfast as well as snack recipe. It is made with onions, tomatoes, Indian spices and the hero “eggs”. It can be enjoyed with pav / roti / paratha / toast.
Preparation Time: 5 mins
Cooking Time: 15 mins
Yield: 2 serving
Ingredients:
- Eggs ~ 3
- Onions ~ 2
- Tomato ~ 1
- Green Chilli ~ 2
- Ginger-garlic paste ~ ½ tsp
- Turmeric powder ~ 1/3 tsp
- Tomato ketchup ~ 1 tsp
- Pepper powder ~ ½ tsp
- Cumin seeds ~ ½ tsp
- Sugar ~ a pinch
- Butter ~ 1 tsp
- Oil ~ 2 tsp
- Salt to taste
How to Prepare:
- Chop onions, tomato and green chillies. Make ginger-garlic paste.
- In a bowl, break and beat the eggs properly.
- Heat oil + butter in a non-stick pan, add cumin seeds and allow it to sizzle.
- Add chopped onions, saute for 2- 3 minutes, then add ginger-garlic paste and saute till the raw smell goes off.
- Add tomato and green chillies, cook till tomato become soft.
- Now add tomato ketchup, turmeric powder, and sugar. Stir well.
- Finally add the beaten eggs and salt, keep stirring till it is cooked.
- Once the eggs are cooked and firm, add pepper powder stir it well and turn off the gas.
- Serve hot with pav / roti / paratha / toast.
