Doi Shorshe Begun (Eggplant in Creamy Mustard ~Yogurt gravy)


Hello Foodies,
Doi Shorshe Begun is a bengali recipe in which eggplants are cooked in rich creamy mustard- yogurt gravy. In this recipe I have used onion, which is totally optional. This simple eggplant recipe pairs well with Rice or Paratha or Chapathis.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Yield: 4 servings
Ingredients:
- Eggplant (begun/Brinjal) ~ 8 baby eggplants
- Onion (optional) ~ ½, chopped
- Tomato (optional) ~ ½, chopped
- Green chilli ~ 2
- Poppy seeds (Posto) ~ 2 tsp
- Mustard seeds (white) ~ 1 tsp
- Mustard seeds (black) ~ 1 tsp
- Yogurt ~ 2 Tbsp ( beaten)
- Ginger ~ ¼, grated
- Panch Phoron or kalonji ~ ½ tsp
- Dry green chilli ~ 1
- Turmeric powder ~ ½ tsp
- Red chilli powder ~ a pinch
- Sugar ~ ½ tsp
- Mustard oil ~ as required (For frying and cooking)
- Water ~ as required (for the gravy)
- Salt to taste
How to Prepare:
- Wash and cut eggplants lengthwise. Marinate with a pinch of salt and turmeric powder for 10 minutes.
- Chop onion and tomato,slit green chillies, grate ginger and make a paste of poppy seeds,mustard seeds. Beat the yogurt properly.
- Heat mustard oil in a pan and fry eggplants.Take it out from oil and drain it. Keep aside.
- To the same oil add dry green chilli and panch phoron or kalonji, allow them to sizzle.
- Add chopped onion and saute for 2 minutes. Then add grated ginger, saute till the raw smell goes off.
- Add tomato and green chilli and cook till become soft. Now add the Mustard-poppy seed paste, red chilli powder and turmeric powder. Mix it well.
- Add beaten yogurt and keep stirring the mixture on medium flame.
- As oil starts to leave the mixture add salt and sugar.
- Add ½ cup of water and for 2-3 minutes allow the gravy to boil, the consistency would be thick.
- Finally add the fried baby eggplants, keep it in flame for 1- 2 minutes. Turn off the gas.
- Sprinkle mustard oil on top and serve hot with Rice / Paratha / Chapathis.
