Hello Foodies,

Bread Egg Bhurji is one of the most simple and quick breakfast as well as snack recipe. This is not only easy but also very healthy and tasty. It consists of vegetables and few spices.

Preparation Time: 5 minutes

Cooking Time: 10 - 12 minutes

Yield: 4 servings

Ingredients: 

  • Brown Bread or white bread ~ 10 slices
  • Eggs ~ 3
  • Onions ~ 1, large
  • Tomato ~ 1 or 2, medium
  • Capsicum ~ 1
  • Spring onion (green) ~ 2-3 sticks
  • Green Chilli ~ 2
  • Ginger ~ 2 tsp, grated
  • Turmeric powder ~ 1/3 tsp
  • Tomato ketchup ~ 1 Tbsp
  • Pepper powder ~ ½ tsp
  • Cumin seeds ~ ½ tsp
  • Curry leaves ~ 4-5
  • Butter ~ 1 tsp
  • Refined Oil ~ 1 Tbsp
  • Salt to taste
  • Coriander leaves (optional) ~ 1 Tbsp 
  • Lemon ~ ½ tsp

How to Prepare:

  • Remove the crusts from the sides of the breads and then cut them into tiny pieces. In a bowl, break and beat the eggs properly. Keep aside.
  • Chop onions, tomato, green chillies, capsicum, and spring onions (green). Grate the ginger.
  • Heat oil + butter in a non-stick pan, add cumin seeds and curry leaves allow them to sizzle. 
  • Add onions, fry till they turn golden in color. Add grated ginger, saute for 1 minute.
  • Add chopped tomatoes and green chillies. Fry them for 2 minutes till tomatoes become soft.
  • Add capsicum, spring onion (green) and coriander leaves, cook for few minutes on medium flame. Stir frequently.
  • Now add tomato ketchup and turmeric powder, stir well.
  • Add the beaten eggs and salt, keep stirring till it is cooked. 
  • Once the eggs are cooked and firm, add the bread pieces and pepper powder, mix them well with the mixture. 
  • Stir it well till all the ingredients blend with each other nicely. Turn off the gas.
  • Squeeze ½ tsp lemon on the top. Serve hot.
