Besan or Gram flour is a very popular ingredient used in making variety of dishes. It is one of the most common ingredient found in every kitchen. It is used in making a variety of savoury and sweet dishes. Besan is used to make different type of pakodas, gravy, and so on. 

Besan ki sabzi or Gram flour curry is one of the most simple, tasty and famous dish. In order to make this sabzi, one can or cannot use yogurt. Here in the recipe below, we have not used yogurt for making the gravy. In this, besan is used to make steamed koftas and then the koftas are dipped in the gravy. The gravy is made using onions and tomatoes. Besan ki sabzi is well paired with Roti/ Paratha/ Rice.

Preparation Time: 15 minutes

Cooking Time: 30 minutes

Yield: 4 servings

Ingredients:

For Koftas:-

  • Besan ~ 1 cup
  • Onion ~ 1, finely chopped
  • Tomato ~ 1, finely chopped
  • Green chilli ~ 1, finely chopped
  • Coriander leaves ~ ¼ cup, finely chopped
  • Ginger ~ ¼ tsp, grated
  • Nigella seeds/ kalonji ~ ¼ tsp
  • Red chilli powder ~ 1/4 tsp
  • Salt to taste
  • Water as required

For Gravy:-

  • Onion ~ 1, large, finely chopped
  • Tomato ~ 1 + ½, medium, finely chopped
  • Ginger-garlic paste ~ 1 Tbsp
  • Green chilli ~ 1
  • Turmeric Powder ~ 1/2 tsp
  • Red chilli powder ~ 1/4 tsp
  • Coriander Powder ~ ¼ tsp
  • Garam masala powder ~ ¼ tsp
  • Asafoetida/Hing ~ a pinch
  • Cumin seeds ~ ½ tsp
  • Curry leaves ~ 4 - 5
  • Sugar ~ ¼ tsp
  • Oil ~ 2 tbsp
  • Salt to taste

How to Prepare:

The kofta:

  • Mix all the ingredients of kofta with water and make a semi thick paste (like that of pakoras).
  • In a deep pan, boil required amount of water so that the kofta will fully immerse, then start pouring the kofta one by one into the pan. (perform the whole process in batches)
  • Let boil for 5-7 minutes and then let cool and separate them from the water. Keep aside and do not throw the water.

The Gravy:

  • Heat oil in a pan, add hing and cumin seeds, allow it to sizzle. Then add curry leaves.
  • Add onions, saute till it becomes light brown in colour.
  • Add ginger garlic paste, saute till the raw smell goes off and then add tomatoes and green chilli.
  • Fry till tomatoes start leaving the oil and it becomes soft.
  • Add coriander powder, turmeric powder, red chilli powder and sugar.
  • Now add the besan koftas. Mix it well with the mixture and fry for a while 
  • Now add the remaining boiled water of the koftas.
  • Add salt and garam masala powder.
  • Let it simmer till the gravy gets 2-3 boils. The amount of water can be increased if required.
  • Turn off the gas.
  • Serve hot with Roti/ Paratha/ Rice.
