Aloo Tamatar | Potatoes in Tomato Gravy


Hello Foodies,
Aloo Tamatar or Potato in Tomato gravy is a very simple, tangy flavored delicious food which works as great side-dish in Indian kitchen. It is very easy to cook recipe. It is the recipe in which boiled potatoes are cooked in a spicy gravy of tomatoes. It goes well with Roti / Puri / Paratha.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Yield: 2 - 3 servings
Ingredients:
- Aloo/ Potato ~ 3, medium
- Tomato ~ 4, medium
- Green Peas ~ ½ cup
- Ginger-garlic paste ~ ½ tsp
- Green chili ~ 2
- Turmeric powder ~ 1/3 tsp
- Coriander powder ~ 1 ½ tsp
- Pepper powder ~ ½ tsp
- Red chili powder ~ 1/3 tsp
- Sugar ~ 1/3 tsp
- Kasuri Methi / Dried fenugreek leaves ~ ½ tsp
- Cumin seeds ~ ½ tsp
- Salt to taste
- Oil ~ 1 Tbsp
- Water ~ as required
- Coriander leaves ~ For garnish
How to Prepare:
- Wash, peel and cut the potatoes into small cubes and pressure cook it for one whistle.
- Chop tomatoes, peel green peas and make a paste of ginger and garlic ( or use ready-made ginger-garlic paste). Chop coriander leaves and keep it aside.
- Heat oil in a pan, add cumin seeds and allow it to sizzle.
- Add ginger-garlic paste, saute till the raw smell goes off.
- Add chopped tomatoes, green peas and green chilies cook till tomatoes become soft.
- Now add turmeric powder, coriander powder, pepper powder, red chili powder and sugar. Mix it well and saute for 2 minutes.
- Now add boiled potatoes, mix well and cook for 5-6 minutes on low flame.
- Add required amount of water, salt and kasuri methi and let it simmer till the consistency of gravy is thick.
- Turn off the gas.
- Garnish with coriander leaves.
- Serve with Roti/ Puri/ or Paratha.
