Aloo Paratha | Stuffed Potato Flat Bread

Hello Folks,

Aloo Paratha is an Indian flat bread stuffed with mashed potato and some spices. This most famous and delicious stuffed paratha can be easily prepared at home and can be served in breakfast, lunch or in dinner. You can enjoy it with yogurt, pickle, pudina chutney or sauce and lots of butter. It can be also enjoyed with onion-tomato raita.

Preparation Time: 30 minutes

Cooking Time: 30 minutes

Yield: 8 parathas

Ingredients: 

For stuffing:-

  • Potato/aloo ~ 5 medium, boiled, mashed
  • Onion ~ 2, medium
  • Ginger ~ ½ inch piece, grated
  • Green chili ~ 2-3
  • Coriander leaves ~ 4 Tbsp (¼ cup)
  • Garam masala ~ 1 tsp
  • Amchur powder (dried mango powder) ~ 1 tsp
  • Red chili powder ~ 1 tsp
  • Roasted cumin powder ~ ½ tsp
  • Lemon juice ~ 2 tsp
  • Sugar ~ 1 tsp
  • Salt to taste

For dough:-

  • Whole wheat flour/ atta ~ 2 cups
  • Refined Oil ~ 2 Tbsp
  • Water ~ as required
  • Salt ~ ½ tsp

Other Ingredients:-

  • Refined Oil/ ghee ~ to fry paratha
  • Butter ~ to serve on top of paratha

How to Prepare:

  • Boil the potatoes in the pressure cooker for 3 - 4 whistles. Let it cool by itself.
  • Finely chop the onions, green chillies, and coriander leaves. Grate the ginger.
  • Now, for making the dough, take atta, salt and oil/ ghee in a bowl. Mix well and start adding little water at a time and knead into soft and smooth dough.
  • Cover it and let it rest for 15 minutes.
  • Peel potatoes, and mash it well. Now, add the ingredients listed under “stuffing” and mix well. Divide it into 8 equal portions.
  • Again knead the dough to smooth it out and divide it into 8 equal portion. Make smooth ball.
  • Take one ball, roll into 3-4 inch diameter circle. 
  • Put the stuffing inside and seal it by gathering the edges into the center.
  • Flatten it using hand and then roll out the paratha.
  • Place it on a hot tava and cook over medium flame. When tiny bubbles starts to rise on the surface, flip it and reduce flame to low.
  • Spread ½ teaspoon oil around its edge with the help of spatula and cook for approx 30-40 seconds. 
  • Flip it again and spread ½ teaspoon oil around its edge. Press it with spatula and cook for another 30-40 seconds over medium flame. Cook till it become golden brown in color.
  • Repeat the same process for rest of the paratha.
  • Serve hot with Butter on top, Yogurt and Pickle.
