Aloo Gobi Cauliflower Potato Curry

Hello Foodies,

Aloo Gobi is one of the most common dish prepared in almost every home in India. It is very simple and easy to cook. Aloo and Gobi cooked together with onion, tomatoes, and few Indian spices. This sabzi pairs well with Roti/ Paratha/ Rice.

Preparation Time: 20 minutes 

Cooking Time: 35 minutes

Yield: 4-5 servings

Ingredients:

  • Cauliflower/ Gobi ~ 1, medium
  • Potato/ Aloo ~ 2, medium
  • Onion ~ 1, medium to large
  • Tomato ~ 1, large
  • Green Chili ~ 2
  • Ginger - garlic paste ~ 1 tsp
  • Turmeric powder ~ ¼ tsp
  • Red chili powder ~ ¼ tsp 
  • Coriander powder ~ ¾ tsp
  • Garam masala ~ ½ tsp 
  • Kasuri methi/dry fenugreek leaves ~ ½ tsp
  • Sugar ~ 1/3 tsp
  • Cumin seeds ~ ½ tsp
  • Bay leaf ~ 1
  • Oil ~ 2 Tbsp
  • Ghee ~ 1 tsp
  • Salt to taste
  • Water ~ as required
  • Coriander leaves ~ For garnish

How to Prepare:

  • Rinse, peel and dice the potatoes. Finely chop the onions, green chilies, coriander leaves, and tomatoes. 
  • Pressure cook the potatoes for 1 whistle. Keep it aside.
  • Chop the gobi/ cauliflower into medium sized florets. Rinse the florets well in water and in a bowl, immerse it in water + salt  for 10 minutes. Drain the gobi and rinse once again with fresh water.
  • Heat 1 Tbsp oil in a pan, add gobi and saute till it becomes light golden brown in color. Remove it from the pan and keep aside. 
  • Add remaining oil in the same pan, add bay leaf and cumin seeds and allow the seeds to sizzle.
  • Add chopped onions and saute till they become golden in color. Add the ginger-garlic paste, stir and saute till the raw smell goes off. 
  • Now, add the chopped tomatoes and green chili, saute till the tomatoes become soft. This takes about 5-7 minutes on a low to medium flame.
  • Now add turmeric powder, red chili powder, coriander powder, and sugar. Saute for few minutes.
  • Add fried gobi and boiled potatoes. Mix it well.
  • Cook for 6-7 minutes, then add water and salt.
  • Let it simmer till the gravy becomes thick.
  • Then add garam masala and Kasuri methi to it. Stir well. Turn off the gas. Pour 1 tsp ghee on top.
  • Garnish with coriander leaves.
  • Serve hot with Roti/ Paratha/ Rice.
