Aloo ki sabzi


Hello Foodies,
The most simple and easy to cook recipe is the aloo ki sabzi and it goes well with roti/ paratha/ puri. Aloo ki sabzi can be made in variety of ways and this is one of them.
Preparation Time: 10 minutes
Cooking Time: 30-35 minutes
Yield: 2-3 servings
Ingredients:
- Aloo ( potato) ~ 5 medium
- Onion ~ 1 large
- Tomato ~ 1
- Peas ~ ½ cup
- Asafoetida (hing) ~ a pinch
- Ginger-garlic paste ~ 1 tsp
- Cumin seeds ~ 1tsp
- Bay leaf ~ 1
- Turmeric powder ~ 1tsp
- Cumin powder ~ ½ tsp
- Coriander powder ~ 1 ½ tsp
- Green chillies ~ 2
- Red chilli powder ~ a pinch
- Curd ~ 1 Tbsp
- Oil ~ 1 Tbsp
- Water ~ as required
- Salt to taste
- Onion rings ~ For garnish
How to Prepare:
- Wash and boil the potatoes with ½ tsp salt. Pressure cook it for 2 whistles.
- Cool down the potatoes and peel them. Cut each potatoes into two pieces and keep aside.
- Heat oil in a pan add bay leaf and cumin seeds to it.
- Add onions and saute till it becomes golden brown in color. Add ginger- garlic paste and saute till the raw smell goes off. Add green chillies and peas.
- Add the chopped tomatoes and cook till it is soft.
- Add all the spices. Mix it well.
- Add curd cook for few minutes.
- Finally add the boiled potatoes. Cook for few more minutes and then add water for the gravy and it simmer for 2 minutes. Turn off the gas.
- Serve with paratha/ roti/ puri as you wish and garnish with onion rings or coriander leaves, in this i have used onion rings as i dont have coriander leaves.
